There's an 'emulator enhancer' that you need to put in the right place maybe to get it working. That will let you set the buttons and directions. It's just Nagware, I think. I would suggest using OpenEmu if you have Yosemite. I'm going to switch over too once I get a new Mac hopefully sometime late this year. I am running Yosemite. I can only configure keyboard buttons. It may also be that it's not recognizing your Coleco joystick with USB adaptor as a legitimate USB joystick. In that case there are some utilities out there that will let you map USB devices to keyboard inputs. It'll take a while to configure everything, but it might work. I would still try OpenEmu before you do anything else. None of my CV roms will open in OpenEmu at all. Just goes to a black screen. I downloaded CrabEmu by itself separately along with the Colecovision bios and configured it in preferences.
